New year rhymes with new wines! For this 2021 edition of its Advent Calendar for Wines, the Domaine du Goût team has set out to explore the regions of France in search of twenty-four new nuggets. Be careful, if you want to keep the surprise and not know in advance the identity of your wines, look no further!

What are the specificities of this new edition?

Great novelty of this 2021 edition: 21 wines out of the 24 in our selection come from wine estates certified in organic farming, HVE labeled or in the process of conversion. What does this mean?

aorganic wineis a wine that meets certain European specifications. The wine must be produced according to the principles of organic farming, whether it is during the work of the vineyard (viticulture) or in the cellar (during the vinification). Converting a vineyard to organic farming takes three years. During this period, the bottles cannot yet display thelabel "AB"even if they are produced according to specifications. From the second year, however, it is possible to mention on the label that the product is "in conversion to organic farming" but without the logo.

theHVE labelis a certification awarded to farms that comply with a certain level of environmental practices. The aspects assessed by this certification are biodiversity, the use of phytosanitary products, water resources, as well as the management of fertilization. The idea is to promote environmentally friendly practices in order to produce wines with less impact on the latter.

Unlike the AB label, an HVE certified wine estate can, for example, use pesticides, as long as it demonstrates that it is making efforts to reduce its use. This label simply attests that the agricultural practices employed on the farm are more respectful of the environment than conventional practices. Organic winegrowers will have to follow more restrictive farming methods.

Also on the program this year: online tastings every evening to learn more about the appellations and specificities of each of the wines! This service will be included in the price of the calendar, and run by enthusiasts to share with you every day a convivial moment rich in discoveries.

What appellations do we find this year?

And now, let's discover the appellations of the 2021 edition of our Wine Advent Calendar.

ALSACE:

Domaine Leon Boesch - Alsace Pinot Noir "Les Jardins" - Red 2019: Red wine with an elegant attack on the palate, silky tannins, a fresh finish. Ideal with a cold meats / cheese platter or apple pudding.

BEAUJOLAIS:

⦁ Domaine les Capréoles - Beaujolais Lantignié "Axiome" - White 2020: White wine made from 100% Chardonnay, in biodynamic agriculture, which combines concentration, roundness and finesse.

⦁ Domaine Richard Rottiers - Windmill - Red 2019: Fruity and structured red wine, with aromas of violets, from Gamay. Gentle vinification in semi-carbonic maceration, followed by aging in casks and barrels for 6 months, give the wine finesse and roundness.

BORDEAUX:

⦁ Domaine Château le Clos du Merle - Côte de Bourg - Red 2017: Red wine made from a blend of three grape varieties (Merlot, Cabernet Sauvignon and Cabernet Franc). Powerful wine with a good balance between acidity and tannins. Pair with beef, veal or game.

⦁ Château Brethous - Cadillac Côtes de Bordeaux - Red 2016: Red wine with still lively and already rounded tannins, with aromas of red and black fruits. It is a blend of Merlot (mostly) and Cabernet Sauvignon. It can be drunk now but will age well too.

⦁ Château Lariveau Canon - Fronsac "Chateau Lariveau" - Red 2016: Fruity red wine with aromas of cherry and blackcurrant, structured, with a good length in the mouth. Goes wonderfully with cassoulet, steak or cheese.

⦁ Château Amour - Médoc - Red 2015: Red wine with a fruity nose (aromas of blackcurrant, redcurrant and raspberry), made from a blend of Cabernet Sauvignon and Merlot. With a fresh and supple palate, it goes well with a platter of cold meats and cheeses. This wine has reached maturity and will stay there for a long time to come.

BURGUNDY:

⦁ Domaine des deux roches - Mâcon La Roche Vineuse "Sur le fil" - White 2019: White wine with fresh aromas of vine flower and white pepper. The attack on the palate is fat, juicy and rich in flavors. It goes well with fish, veal blanquette, creamed chicken ...

⦁ Domaine Julien & Sébastien Pacaud - Saint-Véran "Terroirs de Chasselas" - White 2019: White wine with a straight and fruity nose, with aromas of white flowers and apricot. The palate is frank and delicate, with the same notes of flowers and white fruits. This wine will be accompanied by snails, oysters, frying or even cheese.

⦁ Domaine Baptiste Guyot - Burgundy - Red 2017: Red wine with aromas of red fruits (strawberry, morello cherry, raspberry) with a delicious, supple and silky palate. The nose is both fruity, floral and slightly peppery. A smooth attack, a balanced medium and a long and salivating finish, always on red fruit.

⦁ Domaine Bersan - Irancy - Red 2018: Red wine made up of mostly Pinot Noir and 5% Caesar. Nose on red fruits and spices. The attack is round but frank, the medium balanced between freshness and alcohol. The tannins are silky, the finish long and fruity.

JURA:

⦁ Domaine Caveau des Byards - Côtes du Jura "Grande Réserve" - White 2017: White wine made up of a blend of Chardonnay (finesse) and Savagnin (power). The nose is expressive, with aromas of white fruits (apple and pear) and white flowers (hawthorn and acacia). The palate is round and fleshy, with a balanced medium and a lingering length.

LANGUEDOC-ROUSSILLON:

⦁ Domaine Mas Conscience - Languedoc "L'IN" - White 2019: Mineral and fruity white wine, on the freshness. Blend of Grenache blanc, Roussanne and Viognier.

⦁ Château Estanilles - Faugères "Sous les Rocs Rouge" - Red 2015: Mineral red wine with a charming and deep nose, with aromas of spices and red fruits (blackcurrant and blackberry). The palate is balanced, the tannins tight and the length on the palate extends on notes of cocoa, coffee and liquorice. It goes well with red meats, white meats in sauce or game.

PROVENCE:

⦁ Domaine des Aspras - Côtes de Provence "Les Trois Frères" - Rosé 2020: Tender and elegant rosé wine, with a fruity nose (strawberry, raspberry, peach) with notes of white flowers. The palate is fresh and round, with a nice intensity on the fruit.

SOUTH WEST:

⦁ Château De Chambert - Cahors "Biodynamite Malbec" - Red 2016: Red blended wine from Malbec mostly with a little Merlot. Its nose is fruity (plum) with notes of tobacco and liquorice. The palate is powerful and fruity, with a long and persistent finish. Fresh wine due to the limestone soils.

⦁ Domaine L'Ancienne Cure - Bergerac "Jour de fruit" - Red 2019: Salivating red wine with a nose of red fruits (cherry and strawberry). The palate is round and intense.

⦁ Domaine Labranche-Laffont - Madiran "Vieilles Vignes" - Red 2016: Powerful and structured red wine. The old vines of the estate give a remarkable depth and length to the mouth, softened by the aging in barrels.

THE LOIRE VALLEY:

⦁ Domaine Denizot - Sancerre - Rosé 2018: Fresh and elegant rosé wine with a pleasant intensity all the same. This rosé Sancerre offers Pinot Noir a fresh and crunchy aromatic structure with fruity notes (strawberry and cherry).

⦁ Domaine Sérol - Côte Roannaise "Eclat de Granite" - Red 2020: Young and crunchy red wine to serve slightly chilled. You can feel the fruit in the center, juicy and sweet, but the influence of the soil is also noticeable, giving the wine a mineral touch and a good length.

⦁ Domaine François Cazin - Cour-Cheverny "Domaine Sec" - White 2018: White wine made from Romorantin, a white grape variety only present on 60 hectares in the Loire Valley. Dry wine with a very intense nose on citrus fruits and white fruits (apple, pear) but also white flowers (acacia). The attack on the palate is frank and round, the medium well balanced and the lingering and fruity finish.

⦁ Domaine de Villargeau - Coteaux du Giennois "L'insolite" - Red 2018: Red wine made up of a majority of Gamay but also a little Pinot Noir. The nose is fruity (blackberry, blueberry), slightly peppery and vanilla. The palate is supple, smooth and well balanced, with a long finish on black fruits.

RHÔNE VALLEY:

⦁ Château Mourgues du Grès - Costières de Nîmes "Galets Rosés" - Rosé 2020: Fruity and mineral rosé wine, combining elegance and freshness. It presents a fruity nose (wild strawberry, raspberry, redcurrant) and a lively, mineral and fruity attack on the palate. Wine with a lot of depth but which keeps an airy side.

⦁ Domaine La Ligière - Côtes du Rhône "Les Capelles" - Red 2019: Red wine with a nose of fresh fruit (redcurrant, blueberry) and liquorice. The palate is crunchy, fleshy and always on red fruit, with supple tannins. Pair with a charcuterie platter or lamb skewers.
